This slightly altered found recipe makes the most delicious cookies that are perfect for any coffee lover. I found this recipe about 4 years ago and have been making them ever since. These are my and my dad’s favorite cookies and the slight bitterness of the coffee mixed with the sweetness of the sugar will make them your favorites too.

Mocha Cookies
Ingredients
- 1 cup softend butter
- 2 tbsp instant coffee granules
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 ¼ cups all-purpose flour
- ½ tsp salt
- ¼ tsp baking powder
Instructions
- Preheat oven to 375°
- In a medium bowl, beat butter and coffee granules for 1 minute
- Add sugar; beat until light and fluffy. Beat in egg and vanilla
- In a separate bowl combine the flour, salt and baking powder
- Gradually add to creamed mixture and mix well
- Roll into balls; about 1 tbsp of dough per ball
