Chili

This flavorful chili has always been one of my favorite winter meals and is best with a dollop of sour cream, some cheddar cheese, and a few crackers.

Chili

Servings: 9 servings

Ingredients

  • 1 lb Ground beef
  • 1 can Black beans
  • 1 can Kidney beans
  • 1 can White beans
  • 1 Onion
  • 1 Green bell pepper
  • 2 Jalepeno peppers
  • 1 tbsp Diced chili and adobo
  • 1 large can Tomato puree
  • 1 small can Diced tomatos
  • 1 tbsp Chilli powder
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Crushed red pepper
  • 1 tbsp Cilantro
  • 2 tbsp Olive oil

Instructions

  • Dice onion, bell pepper, and jalapeno
  • In a large pot saute onion, bell pepper, jalapeno, and diced chili and adobo in 2 tbsp of oil on medium-high heat until onions are translucent
  • Add ground beef and brown
  • Add can of diced tomatoes and bring to a boil
  • Add can of tomato puree, fill can halfway with water, and add – bring to a boil
  • Add all three cans of beans and all spices
  • Bring to a boil then turn down to a simmer and let cook until thick ~ approx. 2 hours – stir every 15 minutes
