This flavorful chili has always been one of my favorite winter meals and is best with a dollop of sour cream, some cheddar cheese, and a few crackers.
Chili
Servings: 9 servings
Ingredients
- 1 lb Ground beef
- 1 can Black beans
- 1 can Kidney beans
- 1 can White beans
- 1 Onion
- 1 Green bell pepper
- 2 Jalepeno peppers
- 1 tbsp Diced chili and adobo
- 1 large can Tomato puree
- 1 small can Diced tomatos
- 1 tbsp Chilli powder
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Crushed red pepper
- 1 tbsp Cilantro
- 2 tbsp Olive oil
Instructions
- Dice onion, bell pepper, and jalapeno
- In a large pot saute onion, bell pepper, jalapeno, and diced chili and adobo in 2 tbsp of oil on medium-high heat until onions are translucent
- Add ground beef and brown
- Add can of diced tomatoes and bring to a boil
- Add can of tomato puree, fill can halfway with water, and add – bring to a boil
- Add all three cans of beans and all spices
- Bring to a boil then turn down to a simmer and let cook until thick ~ approx. 2 hours – stir every 15 minutes
